Pumpkin Waffles
Pumpkin season is in full swing, and if you’re looking for more pumpkin recipes to add to your repertoire, these easy Pumpkin Waffles are it!
Ingredients:
- 1 ½ cups flour
- 3 teaspoons baking powder
- ½ teaspoon baking soda
- 3 teaspoons pumpkin pie spice
- ½ teaspoon fine sea salt
- ¼ cup light brown sugar , firmly packed
- 1 cup pumpkin puree , not pumpkin pie filling
- 1 ⅔ cups whole milk
- 2 eggs
- 3 tablespoons butter , melted
- candied walnuts , for garnish
- whipped cream , for garnish
Direction
- In a medium mixing bowl bowl, whisk or sift together the flour, baking powder, baking soda, pumpkin pie spice and salt. Set aside.
- In a separate large mixing bowl, whisk together the eggs, sugar, pumpkin puree, milk and butter, beat until well combined.
- Gradually add the dry mixture into the wet mixture, folding gently.
- Heat the waffle iron and coat generously with cooking spray.
- Add the waffle batter according to package directions. This will vary by waffle maker and brand.
- Serve immediately with syrup, candied walnuts and whipped cream.
