Carrot Raisin Salad

This carrot raisin salad tastes great! I like to add crushed pineapple for a summery flavor. Sometimes I add shredded coconut as well.

Ingredients:

4 ½ cups shredded carrots
1 (8 ounce) can crushed pineapple, undrained (optional)
¾ cup raisins
½ cup sugar or to taste
2 tablespoons sugar, or to taste
½ cup mayonnaise
1 ½ tablespoons freshly squeezed lemon juice

Direction

Combine carrots, pineapple with juice, raisins, ½ cup plus 2 tablespoons sugar (or to taste), mayonnaise, and lemon juice in a large bowl; mix well.
Refrigerate for 2 hours before serving for flavors to meld for best results.
